Certification and blockchain
REGULATION (EC) No 178/2002 OF THE EUROPEAN PARLIAMENT AND OF THE COUNCIL of 28 January 2002 defines “traceability” as the ability to trace and follow a food through all stages of production, processing, and distribution.
Under the provisions set out in the Regulation, food business operators must be able to identify anyone who has supplied them with a food product. To this end, operators must have systems and procedures in place to make this information available to the competent authorities upon request. The objective is to ensure that everything entering the food chain maintains a clear record of its history, making it possible to trace the path from raw materials all the way to delivery to the final consumer.
Mandatory traceability serves to ensure food safety, protect public health, and swiftly withdraw substandard or hazardous food products from the market.
Voluntary traceability goes beyond legal compliance; it is a system freely chosen by a company to track a product’s journey along the entire supply chain.
PaneOlio is committed to complete transparency, from field to table. An olive oil with no secrets, so that everyone can place their full trust in us.
Unlikemandatory traceability, voluntary traceability serves to enhance product origin, guarantee quality, and provide consumers with as much information as possible.While regulations require us to know who supplies our olives and who receives our olive oil, we have chosen to go far beyond that.
For every single batch of extra virgin olive oil, our voluntary traceability system monitors every action taken by the supply chain stakeholders: from the farming practices implemented in the grove where the olives were cultivated and harvested, to the mill where they were crushed within a few hours of harvesting, through to bottling and distribution. Every single phase is thoroughly documented, making it possible to trace back—bottle by bottle—the exact origin and specific characteristics of the product brought to your table. You can truly discover what you eat!
Extra virgin olive oil is a living product, highly sensitive to light, temperature fluctuations, and contact with air. During storage, logistics, and distribution, however, temperature can pose the greatest critical risk. That is why our commitment does not end with quality at the mill: equipped with continuous temperature-monitoring devices linked to our proprietary tracking software, we are able to ensure and trace optimal storage conditions throughout the entire production and distribution chain:
- Production: Our extraction technologies enable us to capture the actual malaxation temperatures—a crucial parameter—and share this data directly with our customers and consumers.
- Storage and packaging: The olive oil, both in bulk storage containers and in the finished-goods warehouse, is stored shielded from light at a constantly monitored temperature of 15–16 °C until the moment of dispatch.
- Logistics and shipping: Our devices record temperatures in real time during transport to distribution centers (CDCs), streaming the data directly to our control system.
- Retail store warehouses: Upon request by the retailer, monitoring can be extended to retail distribution warehouses, ensuring optimal storage conditions remain verified through this stage.
- Retail shelf: We are currently working to extend our traceability system to this final stretch of the supply chain, aiming to guarantee verified storage conditions right up to the point of purchase.
For the consumer, this translates into an olive oil whose journey—from the grove to their table—is not merely recounted, but tracked and verified every step of the way, with the absolute assurance that its organoleptic and nutritional qualities remain intact for as long as possible throughout the entire supply chain.
Certification
Our traceability is UNI EN ISO 22005:2008 certified
Our traceability system is certified by an independent control body in accordance with UNI EN ISO 22005:2008—the international standard defining the requirements for the design and implementation of traceability systems in the feed and food supply chain.
This means that our process—from the grove to distribution, including the storage conditions monitored along the entire chain—is not merely declared by us, but continuously audited by a third-party body, ensuring its ongoing reliability and compliance over time.
Blockchain
Key data, certified on the blockchain
Our database collects a vast amount of data along the entire supply chain: from olive harvesting and milling to storage and distribution. From this data, we select and record on the blockchain the most critical parameters for product quality and for transparency toward our consumers.
Specifically, we publish:
- the temperatures recorded during critical processing and storage stages throughout the entire supply chain;
- the chemical and physical parameters of the olives prior to harvest, verifying the absence of contaminant residues to certify zero chemical residue;
- the chemical and physical values resulting from the analytical testing conducted on the olive oil at packaging;
- the chemical and physical values projected at the best-before date (BBD), calculated using a predictive model developed by the University of Perugia.
This final dataset, in particular, enables us to offer something that goes far beyond a mere snapshot of the product at the moment of bottling: a scientifically grounded projection of how the olive oil will evolve over time, providing you with a concrete guarantee of its quality even months after purchase.
Once uploaded, every data point certified on the blockchain becomes immutable: it cannot be modified, deleted, or altered by anyone—not even by us. This ensures that the most critical information regarding our oil’s quality remains authentic and verifiable over time.
Not all the data we collect is made public: some pertain to proprietary technical processing details that constitute part of our manufacturing know-how, while others are logistical records that add no meaningful value to the consumer’s understanding of the product. We therefore choose to publish and certify only the data that is genuinely meaningful in guaranteeing the quality and safety of what you bring to your table.
