Frantoio

Variety coming from Tuscany but widespread in all Italy. In particular way given the proximity to the border this variety is very widespread also in the area of the Trasimeno. From this variety are produced balanced intense fruity oils with typical hints of almond and cut grass. The oils present a medium-high content of polyphenols that makes them bitter and spicy to the taste in balance with the fruity.

Moraiolo

oil variety widespread in all Umbria with fruit of small dimensions, resistant to drought and with a high oil yield. To the smell the oils present themselves mainly herbaceous, with typical hints of artichoke and almond. To the taste they are intense bitter and spicy oils by virtue of their high content in phenolic compounds.

Leccino

olive variety that had wide diffusion in all Italy around the years by virtue of its resistance to the cold and to the main pathologies of the olive tree. From these olives are produced light fruity oils with, with bitter and spicy of low intensity and hints of herbaceous and almond.
